Lily has recently gotten excited about having quesadillas all the time, so I've been thinking about how to make them better. There are normally two ways: the slow tasty way, via stove, grill or oven, and the fast so-so way, via microwave. But combining them gets you the best of both!
Here's what I've been doing:
- Turn the heat to high under the skillet, add some oil
- Put a tortilla on a microwave-safe plate, put cheese etc on it
- Microwave for ~45s to melt cheese
- Fold over, put in hot skillet for ~20s on each side
The speed of the microwave, but with the browned Maillard taste of real cooking.
(When making them for Lily this is usually followed by a short time in the freezer to get it down to toddler mouth temperatures.)
